太白粉 potato starch 1大匙

香菇 shiitake mushroom 10

味醂 Sweet Sake 1大匙
醬油 Soy sauce 2大匙
鰹魚露 bonito sauce 3大匙
做法 / Recipe
1.篩低筋麺粉 / Sift flour

2.準備好水和低筋麺粉,放入冰箱冷藏 / Prepare water and flour and put them in the refrigerator.

3.切蔥 / Cut green onion

4.把香菇的莖去掉 / Remove the stems from the shiitake mushrooms

5.烹大師 2小匙 / Bonito soup stock 2tsp

6.味醂 1大匙 / Sweet Sake 1tablespoon

7.醬油 2大匙 / Soy sauce 2tablespoon

8.鰹魚露 3大匙 / Bonito soy sauce 3tablespoon

9.水 900ml / water 900ml

10.把湯燒開 / bring the soup to a boil



11.加入香菇,小火煮5分鐘 / Add shiitake mushrooms and simmer on low heat for 5 minutes.

12.剝蝦皮 / peel the shrimp

13.去除後腸 / remove the back intestine

14.剪掉尾巴,去掉水 / Cut off the tail and remove the water

15.在腹部切開一條縫,然後將其伸直 / Make a slit in the abdomen and straighten it out.

16.太白粉 1大匙 / potato starch 1tablespoon

17.水 1大匙 / water 1tablespoon

18.攪拌 / mix

19.用水沖洗並擦乾 / Rinse with water and wipe dry

22.分多次加入低筋麺粉 / Add flour in multiple portions




23.將沙拉油加熱至170度 / Heat salad oil to 170 degrees

24.把蝦子裹上低筋麺粉 / Coat the shrimp in flour

25.將蝦子浸入麵糊中,炸2-3分鐘 / Dip the shrimp in the batter and fry for 2-3 minutes.


26.加入麵糊 / Add batter


27.煮蕎麥麵 / boil soba
